At Fable Tours, we believe the best food experiences happen when you slow down, step off the beaten path, and meet the people behind what you eat. Our tours are designed for small groups, allowing time for real conversations, meaningful tastings and a genuine connection to the land and communities of Connemara, The Burren and Mayo.
We work closely with farmers, foragers, fishers and artisan producers who share our values. Many of these are places you would never find on your own, welcomed through long standing relationships built on trust and mutual respect.
Margaret Leahy is the heart of Fable Tours. A certified Fáilte Ireland guide with deep roots in Ireland’s west, Margaret grew up on a farm where food, seasons and storytelling were part of everyday life. From an early age, she learned the rhythms of the land and how food connects people to place.
With a background in organic farming and daily foraging, Margaret brings a rare depth of knowledge to every tour. Over the years, she has built close relationships with local producers across Connemara and beyond, creating experiences where guests are welcomed as friends rather than visitors.
Margaret lives on a small holding and is deeply involved in the local food community. She has been recognised as a Local Food Hero and has served as an Ambassador to Food on the Edge, reflecting her commitment to sustainable food systems and sharing Ireland’s food culture with integrity and warmth.
Margaret writes a regular column in a national farming paper and is a regular guest on radio discussing food farming and sustainability.
Fable Tours is built on lived experience, local knowledge and genuine relationships. Margaret’s background in farming, foraging and food advocacy means every tour is informed by a deep understanding of seasonality, sustainability and regional food traditions.
